Caribou Fajitas 2 lb. caribou meat 1/4 cup red wine 2 bunches of green onions chopped Soy sauce, Garlic powder, 4-5 flour tortillas 2 tsp. olive oil Monterey Jack cheese, shredded Teriyaki marinade Sour cream Slice meat into thin strips. Rub meat with soy sauce and garlic powder and marinate overnight. Heat skillet with oil and teriyaki marinade and saute meat. Cook for about 5 minutes, add wine and cook until blended; set aside. In same skillet saute green onions or if you prefer do not cook onions. Warm tortillas. On each tortilla, add strips of meat, chopped green onion, shredded cheese, sour cream, and a small amount of pan drippings /OR let everyone select their own topping. Serves 4-5
